Tayybeh Express isn’t just a name; it’s a sanctuary of flavors where the traditional Syrian dish, Fatteh, is lovingly crafted. But what is Fatteh? It’s a symphony of layers, each one harmonizing with the next to create something truly extraordinary. The foundation is made of crispy, fried Syrian bread — the very soul of the dish. In Arabic, the act of breaking bread into small pieces is called “Fatt,” giving rise to the name “Fatteh.” Upon this base, we layer succulent chickpeas or aromatic smoked rice, followed by a crowning layer of tender meat, chicken, or seasonal vegetables. This dish celebrates the diversity of life, accommodating the tastes and means of all who come to the table, from the affluent savoring meat to those who find joy in the humble chickpea.
Born in the heart of Syria, Fatteh transcended its origins to become a cherished meal for workers seeking sustenance during a busy day and evolved into a weekend ritual — a Damascusian family tradition that binds generations. As children, we would awaken to the captivating “Tassha,” the sizzle of olive oil dancing with yogurt, an auditory delight heralding a feast. We’d leap from our beds, drawn to the table, where almonds and pomegranate seeds mingled with chickpeas and creamy yogurt; each bite was accompanied by the crunch of our mothers’ lovingly prepared cucumber pickles.
This nostalgia, this connection to my roots, sparked the inception of Tayybeh Express here in Portugal. I longed to share the warmth of our family tradition with our new community, to extend the familial embrace that Fatteh symbolizes. It’s more than street food; it’s a testament to our heritage, a weekend embrace from a Damascusian family to yours.
In a burst of creativity, I’ve infused our tradition with innovation, presenting the “Fusion Fatteh.” Imagine the delicate surprise of shrimp nestled within the layers, and perhaps, if your tastes so desire, the intriguing addition of octopus in the future. Your palate, your experiences, will shape our journey together.
